If you ask me a Vietnamese equivalent snack to chips such as Pringles or Doritos, I’d say it’s nui chien. It’s our rice macaroni deep fried till puffy and crispy and toss with seasonings, be it sweet or savoury to satisfy your mini hunger between meals
- 50 g macaron
- 1 cup vegetable oil
- 2 tbsp butter
- 1 tbsp sugar
- 1 tbsp plum powder
- 1 tbsp minced garlic
- 1 tsp fish sauce
- 1/2 tsp chili flakes
- water
- Heat vegetable oil till bubbles appear round a chopstick standing into it. Then keep the heat to low and start dropping in the nui. They pop up within seconds and brown very quick, too. So remove quickly with a slotted spoon.
- The first version is a sweet version. When the fried macaroni is still hot, toss with some butter and then sprinkle with sugar.
- With the second version, I will toss with pickled plum powder. That’s sweet and sour flavor. I know you are salivating already… You can toss it with cheese powder, matcha or cocao powder, too. or any of your favorite flavorings
- The third is a savory one: spicy garlic butter fried macaroni.
In a pan, melt 1 tbsp butter and fry 1 tbsp minced garlic till fragrant. To that we add fish sauce, sugar and some water and bring to a simmer for a couple of minutes, so the sugar can dissolve and the sauce slightly thickened. Toss in the crispy macaroni to coat with the sauce. Finally add chili flakes to your liking.
