Recipe: Caramelized Dried Squid - Mực rim

This is one of the favorite snacks of many Vietnamese student generations. It's also a great drinking snack.

Ingredients
- 200 g dried squid
- 1/4 cup sesame
- sugar, fish sauce, vegetable oil
Instructions
- Insert the dried squid into a grilling basket and then grill over charcoal or in an oven until they curve up.
Pound with a pestle to straighten and tenderize them. You can also tear them into smaller pieces.
- Crush 2 whole heads of garlic well in a mortar and pestle.
- Roast 1/4 cup of sesame seeds in a hot pan until they turn quite golden and fragrant.
- Heat 4 tbsp vegetable oil in a pan and then stir-fry the crushed garlic until very fragrant and golden. Toss in the grilled dried squids.
- Add 2 tbsp sugar, 2 tbsp sweet chili jam, 1-2 tbsp fish sauce and 1 tsp chicken stock. Mix well under low heat for 10-15 mins to caramelize the sugar and fish sauce. Sprinkle the sesame seeds.
- It's ready to serve. You can let it cool and store in an airtight container for about 2 weeks in the fridge.
