Nước cốt dừa – Coconut dip for desserts

Ingredients
- 1 cup coconut milk
- 1 cup water
- 2-3 tbsp sugar
- a pinch of salt
- 2 pandan leaf tied into a knot (or vanilla, optional)
- 1 tbsp tapioca starch or corn starch
Instructions
- In a small sauce pan, combine coconut milk, water, sugar, and salt. Stir well and bring to a boil. Lower to medium heat. Add pandan leaf or vanilla.
- Mix 1 tbsp tapioca starch with 3 tbsp water until dissolved. Add in the sauce pan slowly while stirring. Bring to a boil again under medium heat.
- The sauce gets thicker when it cools down. Serve as dipping sauce / topping for desserts such as cow cake, steamed banana cake, puddings sweet drinks etc.
