As summer is still here and lychees are in season in Vietnam, today, I will share with you a refreshing summer salad recipe that hits all the right flavor notes. If fresh lychees are not available in your country, you can use the canned lychees or substitute with other fruits of your choice. Let's begin!

  • Boil the prawns with some salt and a piece of smashed ginger. When they change color, drain and leave to cool.
  • To add more lychee flavor to the dressings, combine three lychees into a food processor and pulse to puree. In a bowl, combine 1 tbsp of the lychee puree, 1 tbsp of mayonnaise sauce, 1 tbsp of yogurt, 1 tbsp of fish sauce, 1 tsp of chili sauce, and half a tsp of minced garlic. Stir well.
  • Combine the cucumber, carrot in the mixing bowl, and toss well with 1 to 2 tbsp of the dressing. Add some julienned ginger, the cooked prawns, and the fresh mint. Add the lychee and toss well.
  • Transfer to a serving plate, garnish with some ginger strips, chili slices, and fried shallots.
