  • Remove the bone from the pork leg.
  • Lay the pork trotter out on a flat surface. Season with garlic powder, pepper, fish sauce, smashed shallots and stock powder. Roll it up and tie into a log (make sure the pork skin cover the log).
  • Steam or boil the pork leg with some salt smashed shallots and sliced onion for about 45mins to 1hr depending on the size.
  • Transfer to a bowl of ice cold water. Leave to cool completely. Then, chill in the fridge for a few hours before cutting into thin slices to serve.
