Recipe: Spicy BBQ Baguette - Bánh mì nướng muối ớt

Ingredients
- ***For the Satéh***
- 1 shallot cut into small pieces
- 2 cloves garlic cut into small pieces
- 2 chili pepper (jalapeno pepper) cut into small pieces
- 1 stalk lemongrass cut into small pieces
- 3 stalks green onion chop up the green part
- 1 tbsp dried shrimp soaked 15 mins in warm water
- 1 tbsp chilli flake
- Others
- 4-8 sausages cut into sticks
- 4 tbsp butter
- 8 tbsp pork floss
- 4 tbsp vegetable oil
- 8 baguettes
Instructions
- In a small bowl, mix the chili flakes w/ 1 tbsp hot water. Combine all other ingredients for sateh into a food processor and blitz into a paste.
- Heat 4 tbsp vegetable oil in a pan till hot, then pour half of it over the green onion bowl to make scallion oil (mỡ hành).
- Add the sateh paste into the oil and sautee for 2-3 mins on low heat. Then add the chilli flakes and simmer on low for 3-5 mins stirring constantly. Transfer this Sateh into a bowl.
- In a small saucepan, combine 1/2 cup fish sauce with 75g sugar and stir on low heat until the sugar is completely dissolved and let it bubble for 2-3 mins on low heat. Add the sateh to the sauce together with 1 tbsp hot sauce (Sriracha)
- Roll the baguettes flat with a rolling pin. Brush with some butter until shiny and then the spicy sauce.
- You can grill it over charcoal or using an infarred stove, or bake in the over at 200C (400F) for 3-5 mins.
- Cut the baguette into small pieces, add a lot of scallion oil, some pork floss, some sausages, drizzle on top some mayonaise and chilli sauce.
