Bò lúc lắc - Shaking Beef

This dish gets its interesting name from the way it is cooked: shaking the beef in the wok.

- 500 g beef (sirloin/ filet mignon/ rib eye) cut into 1-inch (2.5 cm) cubes
- 2 tbsp minced garlic
- 2 tsp sugar
- a pinch of chút salt
- 2 tbsp soya sauce
- 2 tbsp oyster sauce
- 1/2 tsp pepper
- 2 tbsp vegetable oil
- 1 bell pepper cut into 2.5cm/1″ squares
- 1 red onion thinly sliced
- Marinate the beef with 1 tsp minced garlic, 2 tsp sugar, a pinch of salt, 2 tbsp soya sauce , 3 tbsp oyster sauce, ½ tsp pepper, 1 tbsp vegetable oil for at least 30 minutes, preferably 2-3 hours.
- Mix the sliced red onion with 1 tbsp sugar, 2 tbsp vinegar. Set aside.
- Heat a large wok or a pan over high heat until it begins to smoke. Add 1 tbsp cooking oil and fry 1tsp minced garlic till gragrant. Toss in the marinaded beef and stir-fry until seared to your desired doneness. It should take a few minutes only. Don't overcook the beef.
- Transfer the beef to a plate lined with lettuce (or watercress) and tomato slices.
- Sprinkle more black pepper on top and garnish with the pickled red onions. Serve with hot steamed rice, tomato rice or French fries.
