Hi everyone, today's recipe is sea snails with kumquat and fish sauce - a very simple but delicious way to enjoy your fresh sea snails.
- 4 pcs kumquat
- 1/2 tbsp Fish sauce
- 2 tbsp sugar
- garlic minced
- chilli
- Branched murex (Ốc gai)
- Soak snails in rice rinsing water with a crushed chili to release the sand and clean shells. Remove and rinse several times.
- Squeeze to get the juice of 4 kumquats or also called calamansi. Combine with the sugar, fish sauce, minced chili, and stir well to dissolve.
- Steam the sea snails with a few slices of ginger for about 5 minutes.
- Drizzle the sauce into its body to marinate for about 15 to 20 minutes. Save about 3 tbsp of the sauce in the bowl.
- Heat some oil in a pan and sauté the minced garlic until fragrant. Add the remaining sauce and 2 tbsp water. Toss in the marinated see snails, and simmer for around 3 to 5 minutes then turn off the heat.
