The dish "Ribs braised with chives" is a unique combination of tender pork ribs and the distinctive flavor of chives. The ribs are marinated with spices and fried until golden brown, then simmered with fresh coconut water and until tender and infused with flavor. This dish boasts a rich, enticing taste and is perfect to enjoy with steamed rice.

  • Wash and finely chop 2/3 of the chives, leaving the remaining part whole.
  • Soak the pork ribs in salted water for 15 minutes, then drain. Marinate the ribs with 1/2 of the finely chopped chives, 1 tsp sugar, and 1/2 tsp seasoning powder. Let it marinate for 30 minutes. Heat oil in a pan and fry the ribs until golden brown.
  • Heat a pot, add 1 tsp sugar to caramelize, then add the remaining chives to stir-fry until fragrant. Add the ribs back to the pot, then add 3 tsp fish sauce and 250ml coconut water. Simmer over low heat for 30 minutes until the ribs turn golden and the sauce thickens. Add the whole chives to the pot and continue cooking over low heat for another 5 minutes. Season with pepper.
  • Serve hot with steamed rice.
