For those busy days that you don't even have time to go shopping, you can make this quick kimchi fried rice with some leftover cooked rice, and some kimchi in the fridge, add a sunny side of egg on top and voila your hunger is satisfied.
- Cuisine: Korean Influence
- Skill Level: Beginner
- 1 cup leftover cooked rice
- 1 cup Kimchi chopped
- 1 egg
- 1 leek cut thin slices
- 1/2 pc onion chopped
- 1 tbsp Korean hot pepper paste
- 1 tsp sesame seeds
- 1 tbsp soy sauce
- Heat a tablespoon of vegetable oil in a large wok, sauté the chopped onion and leek until fragrant. Add the chopped kimchi and quickly sauté for a minute.
- Add the leftover cooked rice, use a spatula to fluff off the rice. Season with 2 tsp of stock powder, a tbsp of fish sauce, and a tsp of sugar, toss well until the rice absorbs all that juice from the kimchi and turns to an eye-catching orange-red color.
- Transfer to a serving plate and top with a sunny side of egg, garnish with a few sesame seeds.
