The dish "Chicken cooked with compressed chives" is a traditional delicacy, combining the rich flavor of chicken with chives. The chicken meat is marinated with a mixture chives, ofturmeric, and ginger, then stir-fried and simmered in water until fully infused with the spices. This is a delicious dish, easy to prepare, and suitable for enjoying with hot rice on any occasion. The addition of kaffir lime leaves at the end enhances the dish with a fresh and appealing flavor.

  • Place 1/2 of the compressed tuber in a ziplock bag, along with turmeric and ginger, crush them finely.
  • Clean the chicken, rub with salt, then rinse with water. Put the crushed turmeric-ginger mixture into the chicken, add 2 tsp of fish sauce, 1/2 tsp of salt, and 1 tsp of chicken stock powder, mix well, marinate for 30 minutes to 1 hour.
  • Crush the remaining 1/2 of the compressed tuber, put it in a pan with hot oil, stir-fry until fragrant, add the marinated chicken, stir-fry until the chicken is slightly seared, then transfer to a pot, add 500ml of water, simmer over low heat for about 30 minutes until the chicken is tender, then turn off the heat.
  • Place the chicken on a plate, garnish with shredded kaffir lime leaves. Serve hot with rice.
