With its silky flan layer, rich creamy cheese flavor, and subtle bitterness of coffee, the coffee cheesecake jelly dessert will be a delightful treat to captivate your senses.
- 2.8 l water
- 50 g soak agar agar powder
- 450 g sugar
- 2 g salt
- 400 ml coffee
- 250 g cream cheese
- 600 ml whipping cream
- 600 ml fresh milk
- 400 ml condensed milk
- 10 egg yolks
- Pour 2.8 liters of water into a pot, add 50g of soak agar agar powder, 450g of sugar, 2g of salt, stir well, and let the mixture swell for 1 hour.
- Crack 10 egg yolks from chicken eggs, then mix them with 400ml of condensed milk and stir well.
- Add cream cheese, whipping cream, and fresh milk to the pot, stir well, then place it on the stove and cook until the cream cheese melts, simmering over low heat for 7 minutes. Turn off the heat when it lightly boils in the pot.
- Slowly pour the cheese sauce mixture into the egg and milk mixture while stirring continuously, then strain the mixture through a sieve.
- Place the agar agar mixture on the stove over medium heat, stirring constantly, cook for about 10 minutes from the time the mixture boils, then divide it into 2 parts (1L and 1.8L).
- The 1L portion will be used to cook the coffee jelly layer: add 400ml of coffee and 400ml of boiling water to the agar agar pot, stir well in the pot, and cook over medium heat for about 5 minutes.
- The remaining portion is used to cook the flan layer: add the egg and milk mixture to the remaining 1.8L of agar agar water. Place it on the stove and cook over medium heat for an additional 5 minutes.
- Scoop each layer one by one, when the bottom layer is slightly set, gently glide a toothpick over it before pouring the next layer. Place the 2 pots on the stove over low heat.
- Tip for preventing agar agar from separating: - Always place the 2 pots on the stove over low heat - Pour the next layer when the bottom layer is slightly set - Gently glide a toothpick before pouring the new layer.
