Sweet and Sour Fried Fish - Cá Chiên Sốt Chua Ngọt

Sweet and sour sauce is so versatile that it can even go with fried fish. Sweet and sour fried fish can pair very well with rice! Once you tried it, you can't resist to have more.
- 300 g tilapia fillet
- 4 tbsp apple cider vinergar
- 2 tbsp all-purpose flour
- 1 tbsp siracha sauce
- 2 tbsp fish sauce
- 2 tbsp sugar
- 1/2 tsp salt
- 2 chili peppers cut into strips then soaked in ice cold water
- 3 gloves garlic half minced, half sliced
- bird-eye chills minced
- coriander remove the root, rinse under water then let dry
- 1 tbsp tapioca starch
- Cut the tilapia fillet into thumb-sized pieces. Season with salt and 2 tbsp of apple cider vinegar. Leave to marinate for 5-10mins. Discard the water if any.
- Combine the fish with all-purpose flour and toss well to coat.
- Deep fry the fish till golden brown. Remove and drain off the excess oil.
- Heat some oil in a pan and sauté the minced garlic till fragrant. Add fish sauce, sugar, apple cider vinegar, sriracha sauce and stir well. Mix tapioca starch with 1/3 cup of water and add in to thicken the sauce.
- Add minced chili, garlic slices and fried fish. Toss well.
- Transfer to a serving plate. Garnish with chili strips and coriander. Serve with hot steamed rice.
